Bonjour, Summer Salad Perfection!
My daughter gave me this recipe. It's originally from a Food and Wine Magazine's Entertaining Cookbook, but we've both mixed it up and made it our own.
It's so easy to make and very delicious and nice and light. Perfect for these very hot summer days.
First, you make a vinaigrette with the juice of two limes, 1/4 cup of virgin olive oil, salt, pepper and a half a jalapeno pepper, chopped.
In a separate bowl, cube one mango and one avocado and add the juice from half a lime.
Next, you can grill or sautee the sea scallops in 1-2 tablespoons of butter.
When ready, toss your greens (with two chopped scallions) into the vinaigrette and plate.
Next, add the mango and avocados on top of the greens and finish with the scallops.
It's delicious and pretty to look at too!

Looks and sounds wonderful! Will have to try this! Although, I'm not sure we have scallops available around here. May have to tweak it yet "again".
